Healthy Pancakes

This has always been one of my husband’s favourite recipes, he just loves pancakes! He could eat them for breakfast, lunch and dinner, everyday.

The best thing about them is that they are delicious, but much healthier than the standard pancakes! They literally melt in your mouth. Pancakes are made with wholemeal spelled flour, oat milk and eggs.

I prepared special chocolate creme to replace Nutella and to make this pancakes a perfect fit for everyone.

This is a very easy recipe, it takes literally five minutes to put it together.

Ingredients for Chocolate Creme

  • small bowl of different nuts, cashews, almonds
  • 1 tablespoon 100% raw cacao
  • oat milk
  • 2-3 tablespoon of agave syrup

Ingredients for Pancakes

  • wholemeal spelled flour
  • 2 eggs
  • oat milk
  • grated lemon peel
  • cinnamon

Method

Chocolate Creme

Add nuts, cashews, almonds in a blender, add a 1 tablespoon of 100% raw cacao and 2-3 tablespoon of agave syrup. Pour with a little bit of oat milk and blend it. Start with small amount of oat milk and add more, if necessary, depend on density you want. I like it a bit thicker.


Pancakes

Mix wholemeal spelled flour with 2 eggs and oat milk. At last add a little bit of grated lemon peel and cinnamon. You can use measures like you’d use for making normal pancakes, depending on how hungry you are:). Put the pan back on a medium heat and add a little coconut oil. Once the sides are cooked, fill them with a chocolate creme.
To give it an extra taste, sprinkle them with a coconut blossom sugar!
